Ingredients

1 onion, finely chopped
2 garlic cloves, crushed
2 tablespoons oil
40g fresh breadcrumbs
1 egg
1 teaspoon parsley, chopped
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
750g sausage meat
1 teaspoon dried thyme or rosemary

Method

  1. Cook onion and garlic in 1 tablespoon oil until soft but not brown. Mix together onion, garlic, breadcrumbs, egg, parsley, salt and pepper. Add sausage mince and mix well.
  2. Shape into a sausage-shaped loaf, brush with remaining oil and sprinkle with herbs. Wrap in foil and place in an ovenproof dish. Bake in a moderately hot oven for 50 minutes. Serve hot or cold, or use as a filling for sandwiches or bread rolls.
