Ingredients

Quantity Ingredient
165g sugar
1 tablespoon golden syrup
60ml milk
250g marshmallows, chopped
2 tablespoons water
1 teaspoon natural vanilla extract

Method

  1. Combine sugar, golden syrup and milk in a heavy saucepan. Stir over low heat until all sugar has dissolved. Bring to the boil, then simmer gently for 5 minutes.
  2. Place marshmallows and water in top of a double saucepan and heat, stirring frequently, until melted. Pour sugar mixture over marshmallows, beating well. Add vanilla.
  3. Serve sauce hot or cold over ice cream, baked apples, poached pears or peaches, or with fresh fruit salad.

Note

  • Marshmallow sauce may be reheated in a double saucepan. Beat well before serving.
