A toasted pecan–flavoured ice cream.

Ingredients

Quantity Ingredient
60g pecans, chopped
60g butter
1 1/2 tablespoons cornflour
110g sugar
2 tablespoons brown sugar
250ml milk
1 teaspoon natural vanilla extract
250ml cream

Method

  1. Toss pecans with butter in a frying pan over gentle heat until lightly toasted. Cool.
  2. Mix cornflour and sugars. Blend in milk. Pour into saucepan and cook until thick, stirring constantly. Remove from heat and stir in vanilla. Chill.
  3. Whip cream until stiff. Fold in chilled mixture and pecans. Pour into ice cream tray and freeze.
