Sufficient for 4 tomatoes or peppers, or 1 large fish or marrow

Use for fish, tomatoes, peppers and marrow.

Ingredients

Quantity Ingredient
2 rashers streaky bacon, rind removed, chopped
30g butter
1 tablespoon onion, finely chopped
90g mushrooms, finely chopped
185g rice, cooked
1 tablespoon parsley, chopped
2 tablespoons mixed fresh herbs, chopped
or 1 teaspoon dried herbs
freshly ground black pepper
lemon juice
salt

Method

  1. Gently fry bacon over medium heat until fat runs. Add butter, onion and mushrooms and fry until soft. Stir in rice, parsley and herbs, and season with salt, pepper and lemon juice.
