Ingredients

Quantity Ingredient
1kg new potatoes, skin on
salt

Dressing

Quantity Ingredient
2 tablespoons vinegar
1 tablespoon dijon mustard
freshly ground black pepper
6 tablespoons olive oil
15g fresh herbs, chopped

Method

  1. Boil potatoes in salted water until tender.
  2. To make the dressing, place vinegar, mustard and pepper in a small bowl and gradually whisk in olive oil until thick. Stir in herbs and pour into salad bowl. Drain potatoes, then peel and chop. While potatoes are still warm, toss in dressing. Do not chill.
