An excellent old-fashioned accompaniment to bake in the oven with a roast. It is good with barbecued chops or sausages, too. Tomatoes which are a little too soft for salad are right for this dish.

Ingredients

Quantity Ingredient
4 ripe tomatoes, peeled and sliced
2 onions, finely sliced
120g fresh breadcrumbs
30g butter, melted
sugar
freshly ground black pepper
salt

Method

  1. Arrange tomatoes, onions, and breadcrumbs mixed with butter in layers in a shallow ovenproof dish, seasoning tomato layers with a little sugar, salt and pepper, and finishing with a layer of crumbs.
  2. Bake in a preheated moderate oven (180°C) for 45 minutes or until vegetables are soft and top browned.

Variation

  • Herbed tomato savoury: Follow recipe above but sprinkle tomato layers with 2 teaspoons chopped fresh mixed herbs, or 1/2 teaspoon dried herbs mixed with 2 teaspoons chopped parsley.
