750g yams
155g butter
1/4 teaspoon freshly ground black pepper
2 tablespoons brown sugar
2 eggs, beaten
2 tablespoons white wine
1/2 teaspoon cinnamon
1/2 teaspoon salt

Method

  1. Bake yams whole, without peeling, in a preheated very hot oven (230°C) for about 1 hour or until tender. Halve, scoop out flesh, and mash with 125 g butter. Add salt, pepper, sugar, eggs and wine, and beat until fluffy.
  2. Pour into a greased ovenproof dish, sprinkle with cinnamon and dot with remaining butter. Bake in a preheated moderate oven (180°C) for about 45 minutes. Serve warm.
