Ingredients

Quantity Ingredient
500g plain yoghurt
4 tablespoons brown sugar
2 lemons, zested and juiced
1/2 orange, zested and juiced
2 tablespoons powdered gelatine
60ml water
3 egg whites
bananas, to serve
lemon juice, to serve
brown sugar, to serve

Method

  1. Put yoghurt into a large bowl and beat in sugar, lemon and orange juice and zest. Soak gelatine in water and dissolve over hot water. Fold gently into the yoghurt mixture.
  2. Beat egg whites until they hold soft peaks and fold into yoghurt mixture. Chill for 2 hours and serve on the same day; the texture changes if kept too long. Serve with sliced bananas sprinkled with lemon juice and brown sugar.
