Baked asparagus bundles

Bundles of ham wrapped around asparagus and cheese make a good, simple lunch, brunch or supper — just serve with a loaf of crusty bread. Look for lovely fat asparagus spears.

Ingredients

Quantity Ingredient
15g butter
4 spring onions, finely sliced
1 teaspoon dijon mustard
6 tablespoons cream
a squeeze lemon juice
250g leg ham, thinly sliced
1/2 cup freshly grated parmesan cheese
2-3 bundles asparagus, cooked
freshly ground black pepper

Method

  1. Preheat the oven to 190°C. Melt the butter in a small frying pan, add the spring onions and sauté until soft. Stir in the mustard, 2 tablespoons of the cream and the lemon juice and combine well.
  2. Spread a small amount of the spring onion mixture evenly over each slice of ham. Sprinkle each with some parmesan.
  3. Place two or three asparagus spears (depending on the size) in the centre of each ham slice. Fold the ham over the asparagus, and arrange the packages in a lightly greased baking dish. Pour over the remaining cream and sprinkle with remaining cheese and a good grinding of pepper. Bake for 15 minutes or until golden.
