Ingredients

Quantity Ingredient
500ml water
500ml chicken or vegetable stock
180g polenta
60g freshly grated parmesan cheese
salt, to taste

Method

  1. Bring the water and stock to the boil in a heavy-based saucepan. Sprinkle in the polenta, whisking well to prevent lumps forming. Reduce to a low simmer and cook for 10 minutes, stirring often, until the mixture thickens. Take care, as the polenta can splutter and burn; a long-handled spoon is ideal. Add more stock or water if it becomes too thick to stir.
  2. Remove from the heat and stir in the parmesan. Season to taste, then pour the cooked polenta into a deep baking dish and allow to set for at least 4 hours. Cut into wedges or triangles.
  3. Preheat the oven to 180°C. Arrange the wedges on an oiled baking tray and bake for 20 minutes, or until crispy and golden. Alternatively, cook the wedges on a hot barbecue plate.
