Using half water and half stock adds richness to the finished polenta. if you don’t have stock available it’s fine to just use water. sometimes i double the recipe and set half aside to make polenta wedges for later in the week.

Ingredients

Quantity Ingredient
500ml water
500ml chicken or vegetable stock
180g polenta
60g freshly grated parmesan cheese
salt, to taste

Method

  1. Bring the water and stock to the boil in a heavy-based saucepan. Sprinkle in the polenta and stir constantly to prevent any lumps forming. Reduce to a low simmer and cook for 10–15 minutes, stirring often, until the mixture thickens. Take care, as the polenta can splutter and burn; a long-handled spoon is ideal.
  2. Remove from the heat and stir in the parmesan. Season, to taste, and serve immediately.
