Ingredients

Quantity Ingredient
250ml plum sauce
2 tablespoons grated root ginger
4 tablespoons soy sauce
2 star anise
2kg american-style pork spare ribs

Slaw

Quantity Ingredient
125g sour cream
2 tablespoons lemon juice
salt and freshly ground black pepper
1/4 red cabbage, shredded
4 spring onions, thinly sliced
1 green apple, peeled and grated
2 tablespoons chopped flat-leaf parsley

Method

  1. Combine the plum sauce, ginger, soy sauce and star anise in a small saucepan and bring to the boil. Reduce the heat and simmer for 2–3 minutes to infuse the flavours. Remove from the heat and allow to cool.
  2. When the sauce is cool, pour it over the pork spare ribs and leave to marinate for 1 hour, time permitting, turning occasionally.
  3. To prepare the slaw, mix the sour cream with the lemon juice and season with the salt and pepper. Mix together the cabbage, spring onion, apple and parsley. Pour the sour cream over and toss to combine.
  4. Heat a barbecue grill until hot. Cook the ribs for 8–10 minutes, turning occasionally. When the ribs are cooked, cut into portions and serve with the slaw.
