Soy, lime and chilli lamb cutlets

Lamb and asian flavours go together really well. you can swap the cutlets for lamb chops or fillets, if you prefer.

Ingredients

Quantity Ingredient
1 lime, grated zested and juiced
3 tablespoons light soy sauce
2 small red chillies, seeded and finely diced
oil, for cooking
freshly ground black pepper
12-16 lamb cutlets

Method

  1. Mix together the lime zest and juice with the soy sauce, chillies and 1 tablespoon of oil. Season with the pepper. Pour over the lamb and toss to combine. Drain the excess marinade.
  2. Heat a barbecue grill until hot. Brush the cutlets lightly with oil, then cook for 4 minutes, rotating once. Turn the cutlets over and cook for a further 3–4 minutes, rotating once. Serve with a green salad.
