This is a recipe that has been enjoyed by thousands of customers in my restaurants – incredibly tasty, so refreshing and full of goodness. In a nutshell, it is a blended salad. You can keep it in a bottle in your fridge for up to 3 days.

Ingredients

Quantity Ingredient
500g watermelon, Peeled and chopped
4 tomatoes, chopped
1 red pepper, chopped
1/4 cucumber, chopped
1/4 onion, chopped
1/2 garlic clove, chopped
1 slice bread, chopped
1 teaspoon ground cumin
3 tablespoons sherry vinegar
a drizzle olive oil
1 tsp salt

Method

  1. Place all the ingredients in a blender and liquidize until smooth. Check the seasoning and adjust if necessary. Serve over ice.

Note

  • If you want to serve this as a starter and make it a bit more filling, serve it in a soup bowl with croutons and a drizzle of extra virgin olive oil.
