Mince tarts are the perfect Christmas treat, but can often be laden with sugars and additives. This silly season, swap the nasties for a hit of raw, festive goodness using this twist on the traditional recipe. Your Christmas guests won’t believe how good they are.

Pana mince tart filling

10 medjool dates, pitted and chopped
20g goji berries
50g blueberries
3 tablespoons coconut sugar
120ml fresh orange juice with pulp
1 tablespoon ground cinnamon
pinch ground ginger
pinch ground nutmeg
pinch himalayan pink salt
150g prunes, chopped into small pieces


  1. Prepare the tart shell mixture according to the instructions.
  2. Firmly press approximately 20 g of the mixture into the tart tins to shape, then carefully remove the tarts from their moulds and place on a mesh dehydrator tray.
  3. The remaining mixture will form the tops of your tarts. Roll it between two sheets of baking paper, then use the star cookie cutter to cut out stars.
  4. Dehydrate the shells and stars at 40°C overnight on a mesh dehydrator tray, making sure the tart is dry. Allow extra time if it is not completely dry.
  5. Remove the tart shells when ready to use.
  6. To make the mince tart filling, soak the dates, goji berries, blueberries and coconut sugar in orange juice for at least 1 hour.
  7. Blitz the soaked mixture in a food processor until gently combined, being careful not to blend it to a paste.
  8. Add the spices, salt and prunes to the food processor and blitz for 2–3 seconds.
  9. Assembly:

    Divide the mince tart filling among the tart shells. Place the stars on top of the tarts while the mince is still wet so it holds them in place.


  • If you are looking to keep the crunch of the star, brush the back of each star with melted chocolate and set before placing on the tart.
