Cheesy bacon, spinach and chive wrap

All warm, comforting and yet with a slight nod to a healthy lunch (well, it has some veg in it!), there are quite a lot of strong flavours at work here – the saltiness of the bacon and Stilton, the pungent chives and the sheer deliciousness of all three together. The spinach acts as a blotting paper to soak them all up and stop them from becoming too much to handle. It works equally well with a mild cheddar.

Ingredients

2 rashers bacon, rind left on and chopped
1 flour tortilla wrap
50g baby spinach leaves
50g stilton, crumbled
1 tablespoon chives, chopped
4-5 cherry tomatoes, halved

Method

  1. Set a frying pan over a high heat and once it’s hot add the bacon, stirring it around for 5 minutes so that it starts to brown and become crispy. Spread the wrap out on a plate and tip the bacon and any fat it has emitted into the middle. Set aside to allow the flavours to soak in.
  2. Return the pan to the heat and throw in the spinach, Stilton and chives, stirring continuously for 1 minute. The Stilton will melt and the leaves will begin to wilt – tip the mixture over the bacon and place the cherry tomatoes on top. Carefully fold the wrap up from the bottom and over at the sides so that it creates a pocket you can easily hold. Eat immediately.

  • Basil, sage or oregano.
