My partner’s grandmother – aged 92 – has always cooked fish in this way, which explains its old-fashioned, Mrs Beetonesque salt water method. It feels very counterintuitive, but the fish turns out perfectly every time, tender and wonderfully flavourful. The lemon and chervil make a tangy accompaniment – this is the sort of meal you can serve when you’ve got home from work and can’t face any real cooking. Easy, but impressive.

Ingredients

2 salmon fillets
2 heaped teaspoons salt
1 tablespoon oil
1 tablespoon chervil, chopped
1 lemon, juiced
150g creme fraiche
mint flowers, for serving (optional)
or borage flowers, for serving (optional)

Method

  1. Place the salmon fillets into a saucepan with a lid and cover the fish completely with cold water, adding in the salt. Two heaped teaspoons feels a lot but don’t worry, you won’t taste it, it just means that the boiling point of the water is raised. Cover and set over a very low heat, keeping a close eye on it.
  2. Meanwhile, add the oil to a frying pan set over a fairly high heat and cook the chervil for a couple of minutes, until it sizzles and starts to smell quite fragrant. Add the lemon juice and crème fraiche and stir everything together on the hob, removing it from the heat before it boils. At this point, the cold water around the fish should be getting close to a small boil – the moment the water starts to move (about 10 minutes after you set it on the heat), the salmon is cooked and should be immediately removed from the pan using a slotted spoon.
  3. Serve the fish straightaway, with the lemon sauce drizzled liberally over the top. Scatter with a few borage or mint flowers if you have them and serve with some boiled potatoes, mash or peas on the side.

Substitute the chervil with...

  • Dill, mint or lemon balm.
