Orange halawa with sultanas

Halwas have a Turkish and Middle Eastern ancestry, and many different versions can be found throughout India, some of them truly, uniquely Indian. This halwa, a lovely, warm, citrusy pudding made with semolina in just minutes, is the ultimate winter dessert. It is also perfect for afternoon tea.

Ingredients

Quantity Ingredient
60g Ghee
125g semolina
110g sugar
2 tablespoons sultanas
190ml orange juice, freshly squeezed, from 2–3 oranges
1 tablespoon orange zest, grated
125ml milk
orange segments, to garnish

Method

  1. Heat the ghee in a large frying pan over a medium heat. Cook the semolina, stirring continuously, for about 5 minutes, or until it starts to brown.
  2. Add the sugar and sultanas and cook, stirring, for 1 minute. Add the orange juice and zest and mix together thoroughly, then cook for 2 minutes.
  3. Pour in the milk and cook, stirring vigorously, for 8–10 minutes or until the liquid is completely absorbed.
  4. Garnish with the orange segments and serve hot.
