The subtle flavours of this luxurious and creamy dip have been given a kick in our version with the addition of chilli and lime. The red onion and tomato give it more substance, a little crunch and a great colour.

Ingredients

Quantity Ingredient
1 large ripe avocado, (160g)
1 large tomato, deseeded and finely chopped, (80g)
1 small red onion, finely chopped, (80g)
1 red or green chilli, finely chopped, (optional)
1 tablespoon chopped coriander
1 teaspoon finely chopped parsley leaves, (optional)
1 tablespoon extra virgin olive oil
sea salt
freshly ground black pepper
1 lime, juiced, or to taste

Method

  1. Mash the avocado with a fork and mix in the tomato, red onion and chilli, if using.
  2. Mix in the coriander and parsley (if using) and season with extra virgin olive oil, salt, pepper and plenty of lime juice.

Top Tip:

  • This makes a great filler for pitta pockets, wraps or our Nori rolls. Alternatively, place a flour tortilla in a dry frying pan, spread over the guacamole with a sprinkling of grated cheese and fold over to form a semicircle. Fry on both sides for a couple of minutes until golden brown and the cheese has melted.
