Fried green vegetable with spice paste

Ingredients

Quantity Ingredient
2-3 tablespoons vegetable oil
250g small raw prawns, shelled and deveined
500g okra or other non-leafy green vegetable
4 tablespoons water
salt

Paste spices

Quantity Ingredient
3-5 red chillies
4 candlenuts
2.5 x 2.5cm slice shrimp paste
2 small garlic cloves
8 shallots, sliced

Method

  1. First prepare the spice paste. Pound all the spices into a paste. Heat the oil in a wok and fry the spice paste until it smells fragrant and no longer sticks to the pan. Then add the prawns and stir-fry for a minute. Add the vegetable and stir-fry, coating well with oil and spices. Add the water and salt to taste, and stir-fry uncovered until the vegetable is cooked but not soft and the water has disappeared.
  2. If you want the vegetable to be softer put on a lid and steam for 1 minute after adding the water. Be careful though as this may overcook the prawns.
