Cabbage in coconut milk

Southern Malays often cook vegetables in coconut milk this way. Although this recipe is for cabbage, it may be used for other vegetables such as sliced bamboo shoots, green beans or beansprouts. With beansprouts, however, put them in at the same time as the thick coconut milk so they will not become soggy.

Ingredients

Quantity Ingredient
500g cabbage or curly kale, shredded
1 1/2-2 cups thin coconut milk
100g small prawns, shelled and deveined
1 cup thick coconut milk

Paste spices

Quantity Ingredient
2 fresh chillies, to taste
1.5 x 1.5cm slice shrimp paste, wrapped in foil and roasted
5cm piece fresh turmeric
or a good pinch turmeric powder
1 garlic clove
4 shallots

Method

  1. First mash the spices into a paste. Put the thin coconut milk and the spice paste into a pot or a saucepan, stir well, and bring to the boil. Add the cabbage and cook till tender. Add the prawns just before the cabbage is cooked, and when they are cooked put in the thick coconut milk and bring just back to the boil before serving.
  2. This dish is usually served with sour-cooked fish or grilled fish and an acar.
