This is a recipe from Sarawak. ‘Dyak’ eggplant is a vegetable grown by farmers after they have burnt their fields and before they plant padi (rice). It is round and orange in colour, the size of a small grapefruit, and more delicate than purple eggplant. Orange eggplant is now grown in northern Queensland in Australia and is sometimes available between May and October from specialty greengrocers. The dish is still good made with purple eggplant, however.
