Ingredients

2 tablespoons dried prawns
4 red chillies, sliced
2.5 x 2.5cm slice shrimp paste, roasted
2 small or lebanese cucumbers
or 1 large cucumber, cut into two or four lengthwise, seeded and sliced diagonally into thick strips
2 limes, juiced, or to taste
sugar, to taste

Method

  1. Soak the dried prawns in warm water for 10 minutes and drain. Grind them coarsely in a mortar or a food processor attachment. Similarly mash the chillies and the shrimp paste to a fine paste, add the dried prawn and mix. Toss this with the cucumber, add lime juice and sugar to taste and toss well.
