Fried water spinach with belacan

Ingredients

Quantity Ingredient
300-500g water spinach
2-3 tablespoons vegetable oil

Paste spices

Quantity Ingredient
3-4 red chillies, sliced
5 x 5cm slice shrimp paste
6 shallots, sliced
3 garlic cloves, sliced

Method

  1. Wash the water spinach, cut off the tough bottom ends of the stems and discard then cut the rest into 5 cm lengths. Pound the chillies, shrimp paste, shallots and garlic to a paste.
  2. Heat the oil in a wok and fry the spice paste until fragrant. Add the vegetable and stir-fry until it is well coated with oil and spices and is cooked but retains a crispness. Serve with rice.
  3. This dish may also be cooked using 25 g dried shrimps instead of or as well as the shrimp paste. Wash the dried shrimps under a tap and soak them in warm water for a while. Pound them coarsely and fry with the other pounded ingredients until everything is fragrant. Add the vegetable and proceed as before.
