Chicken braised with ginger and lemongrass

Ingredients

Quantity Ingredient
3 stalks lemongrass, finely sliced
3 garlic cloves, smashed and chopped
5cm piece ginger, chopped
1kg chicken drumsticks, chopped into 4 x 5 cm pieces
2-3 tablespoons fish sauce
1-1 1/2 tablespoons sugar
pepper, to taste
salt, to taste
3 tablespoons oil
1 cup water

Method

  1. In a mortar or a food processor attachment pound the lemongrass, garlic and ginger to a paste. Marinate the chicken in a mixture of 2 tablespoons fish sauce, 1 tablespoon sugar, pepper and salt for 20 minutes or so. Heat the oil in a pan. Remove the chicken from the marinade, add it to the pan and stir-fry until it changes colour. Add the lemongrass mixture and stir-fry until fragrant. Add the remaining marinade and the water, stir well, cover and simmer over low heat for about 30 minutes. Remove the lid, taste and adjust the seasonings, adding more fish sauce and sugar if you wish. Continue cooking until the chicken is done, the water is reduced and the sauce thick.
