Ingredients

Quantity Ingredient
100g peas, cooked
150g ricotta
4 slices wholemeal bread
150g smoked salmon
4 sprigs mint
salt
pepper
1/2 lemon, juiced

Method

  1. Blend the peas with the ricotta and a pinch of salt. Spread the slices of bread with this mixture. Top with the slices of smoked salmon, then the mint leaves. Season with pepper and drizzle with lemon juice before serving.
