Ingredients

Quantity Ingredient
1/2 mango, peeled and stone removed
4 tablespoons double cream
1 teaspoon curry powder
salt
1/2 granny smith apple
1 small cucumber
1 spring onion
2 sprigs mint
4 slices wholemeal bread
pepper

Method

  1. Dice the mango and combine with the double cream and curry powder and a pinch of salt. Thinly slice the apple and cucumber. Finely chop the spring onion and snip the mint. Spread the slices of bread with the creamed mango and top with the spring onion, then the apple and cucumber slices. Sprinkle with snipped mint and season with pepper before serving.
