Ingredients

Quantity Ingredient
3 tomatoes
1 small red chilli
1 garlic clove
handful chives
4 sprigs thyme
1/2 lemon, juiced
3 tablespoons olive oil
salt
pepper
6 small slices artisan country bread
6 tablespoons hummus

Method

  1. Finely dice the tomatoes, chop the small red chilli (remove the seeds for a less spicy salsa) and the garlic clove. Snip the chives and destalk the thyme. Combine all these with the lemon juice and olive oil to make the salsa. Season with salt and pepper. Spread the slices of bread with hummus and serve with 1 tablespoon of salsa on each slice.
