Tahini, avocado & tofu

Ingredients

Quantity Ingredient
100g smoked tofu
1 tablespoon olive oil
1 tablespoon soy sauce
1 small firm avocado
1/2 lemon, juiced
4 slices artisan country bread
4 tablespoons tahini
1 sprig mint
1 tablespoon golden sesame seeds
salt
pepper

Method

  1. Slice the tofu. Heat the olive oil in a frying pan and sauté the tofu slices for 5 minutes with the soy sauce. Peel the avocado, remove the stone, chop the flesh and add the lemon juice. Cut the tofu slices into small dice. Spread each slice of bread with tahini, then top with the chopped avocado and diced smoked tofu. Snip the mint and sprinkle over the bread, along with the sesame seeds. Season with salt and pepper before serving.
