Rice with carrots

Ingredients

Quantity Ingredient
1kg chicken breasts
or 1 whole chicken
500g carrots
185g ghee or butter
salt and freshly ground black pepper, to season
1 large onion, finely chopped
1 teaspoon ground turmeric
60ml lemon juice
55g brown sugar
1 quantity Chelou

Method

  1. Cut the chicken breasts into quarters; if using a whole chicken, joint the chicken and cut the larger pieces in half. Scrape the carrots and cut into batons 5 mm thick and 5 cm long.
  2. Heat half the ghee in a frying pan and brown the chicken pieces on each side, in batches if necessary. Remove to a plate and season with salt and pepper.
  3. Heat the remaining ghee in the pan and gently fry the onion until translucent. Sprinkle in the turmeric, add the carrots and cook, stirring often, for a further 5 minutes.
  4. Add the lemon juice, sugar and 125 ml water and stir to dissolve the browned sediment. Return the chicken to the pan, then cover and simmer gently for 10 minutes. Remove the chicken and set aside.
  5. Meanwhile, prepare the chelou to the point where the rice is boiled for 5 minutes and drained. Swirl half the butter mixture from the chelou recipe around the pan, then spread half the rice evenly over the base. Place the chicken pieces on top of the rice, then spread the carrot mixture over the chicken. Spread the remaining rice over the carrots, then add the remaining butter mixture from the chelou recipe.
  6. Cover the rim of the pan with two paper towels. Put the lid on tightly and cook over medium–low heat for 40 minutes. Alternatively, you can layer the polou in a casserole dish and bake in a 170°C oven for 30 minutes.
