Strawberry jam

Ingredients

Quantity Ingredient
1kg strawberries
2 lemons, juiced
770g sugar

Method

  1. Wash the strawberries, drain well and remove the hulls. Cut in half and place in a preserving pan with the lemon juice.
  2. Place over medium heat, cover the pan and bring to the boil. Reduce the heat to low and simmer gently for 20–30 minutes, or until the fruit is very soft.
  3. Remove the pan from the heat and stir in the sugar. Place back over medium heat, stirring again to dissolve the sugar.
  4. Bring to the boil, then allow to boil over medium heat for 15 minutes, or until the jam sets when a little is tested on a cold saucer.
  5. Cool the jam a little, then ladle into hot, sterilised jars.
  6. Seal while hot and store in a cool place.
