Shepherd’s pie

Shepherd’s pie

From Pasta to Pancakes
Claire Peters

This is so delicious, especially on winter days. You can have it with some delicious peas and a good glob of ketchup. No clues with the name, but shepherd’s pie is made with lamb and cottage pie with beef, so if you fancy beef then just substitute beef mince for the lamb mince.

Quantity Ingredient
4 tablespoons olive oil
4 garlic cloves, peeled and crushed
1 red chilli, deseeded and chopped finely
1 red onion, peeled and chopped
3 carrots, peeled and chopped
1kg lean lamb mince
3 tablespoons worcestershire sauce
2 glasses red wine
400g canned chopped tomatoes
250g cheddar cheese, grated

Potato topping:

Quantity Ingredient
1.6kg potatoes, peeled
110g butter
200ml milk

  1. Preheat the oven to 200°C. Heat the olive oil in a large saucepan over a medium heat and add the garlic, chilli, onion and carrots. Cook on a medium to low heat for 4–5 minutes until soft.
  2. Up the heat and when the vegetables are soft add the mince.
  3. Cook for 4–5 minutes.
  4. Add the Worcestershire sauce, wine and tomatoes. Season well.
  5. Cook for up to 1 hour, longer if you can. It should taste very meaty and delicious.
  6. While the meat is bubbling away, bring a large pan of water to the boil and add the potatoes. Cook until soft, around 15–20 minutes, depending on their size.
  7. Drain and mash well, add the butter and milk and season with salt and pepper.
  8. Spoon in the meat sauce into a large ovenproof dish. It should half fill the dish.
  9. Carefully spoon the mashed potato over the top.
  10. Season, then sprinkle with grated Cheddar cheese.
  11. Place on a baking tray in the oven for 30–40 minutes until golden and bubbling.

Optional extras:

  • You could use Gruyère cheese as a treat for the top, as it’s sensational when melted. You could also use celery instead of (or as well as) the carrots.

Serving suggestions:

  • Amazing with garden peas, ketchup and a glass of red wine.
