Ingredients

Quantity Ingredient
400g lean lamb, minced
1 spanish onion, grated
1/2 cup parsley, roughly chopped
2 garlic cloves, crushed
1 teaspoon ground cumin
1 teaspoon ground coriander
1 tablespoon tomato paste
2 tablespoons breadcrumbs
1 egg, lightly whisked
1/4 teaspoon tabasco sauce
plain flour, for dusting
2 tablespoons extra-virgin olive oil, for frying

Tzatziki

Quantity Ingredient
1/2 lebanese cucumber, seeds removed, grated and drained
1/2 cup reduced-fat yoghurt
squeeze lemon juice
1/2 teaspoon ground cumin

Method

  1. To make the tzatziki, mix together the ingredients and refrigerate until serving time.
  2. To make the kofta, combine the lamb, onion, parsley, garlic, cumin, coriander and tomato paste in a large bowl. Add the breadcrumbs, egg and Tabasco and stir until well mixed. Season with salt and pepper. Using wet hands, roll tablespoons of the lamb mixture into balls. Lightly dust with flour.
  3. Fry the kofta in the oil in batches over medium heat, turning occasionally, for 8–10 minutes or until cooked through. Drain on paper towel.
  4. Serve with the tzatziki.
