Lemon and lime linguini

This is a happy Italian noodle dish with some Asian inspiration. It’s a bit like wearing your favourite summer outfit: it’s easy, colourful and feels good.

Ingredients

Quantity Ingredient
400g freshly shelled peas
100ml lemon juice
1 tablespoon mirin
2 tablespoons white miso
250g wholemeal linguine
3 tablespoons extra virgin olive oil
2 teaspoons lemon zest
1 tablespoon dill, chopped
3 tablespoons lime juice

Method

  1. Bring a large saucepan of water to the boil, drop in the fresh peas and cook for 3 minutes, or until tender. Refresh immediately under cold running water, then drain again.
  2. Put the peas in a food processor with the lemon juice, lime juice, mirin and miso and pulse to make a smooth purée. Set aside until needed.
  3. Cook the pasta in a saucepan of boiling salted water for 8–9 minutes, or until al dente. Drain and set aside.
  4. Heat the oil in a large frying pan over medium heat. Add the pasta and lemon zest and toss until warmed through. Fold in the pea purée, coating the pasta completely. Serve immediately with the dill sprinkled on top.
