Frikadeller, or meatballs, are served in most Scandinavian homes once a week. But this is not a Scandinavian recipe, because all food cultures have some kind of meatball. I love the idea that there are these dishes that connect food cultures around the world, because most food cultures evolve through exchange, such as trade, migration and travel. My recipe has also evolved from my grandmother’s recipe and makes a large quantity. Eat any leftovers cold, for example in a sandwich. If you don’t eat pork, then use only beef.
