Smoked herring with cream cheese and poached egg

Bornholm is an island in the Baltic Sea famous for smoked herring, which is so good fresh from the smokehouse and served with rye bread and raw egg yolk. Just imagine the sun shining, the sea rustling in the background, herring and ice-cold Danish beer: that’s your summer hygge.

Ingredients

Quantity Ingredient
2 smoked herring
100g cream cheese
2 slices rye bread
1 handful crispy green salad leaves
1/4 cucumber, sliced
2 eggs
6 radishes, chopped
2 tablespoons chopped chives
sea salt
freshly ground black pepper

Method

  1. Rinse the smoked herring and remove all skin and bone then divide into smaller pieces. Spread the cream cheese on the rye bread, arrange the salad leaves over the cream cheese and add the smoked herring then the cucumber on top. Sprinkle over the chopped radish.
  2. Now poach the eggs and place on top of the radishes, sprinkle with chopped chives, and some salt and pepper. Serve right away.
