Ingredients

Quantity Ingredient
100g caster sugar
100ml water
150g shelled walnuts
100ml dessert wine
or 100ml port
or 100ml sherry
or 100ml red wine
or 100ml white wine

Method

  1. Put the sugar and water in a saucepan and bring to the boil, stirring to dissolve the sugar, then reduce the heat and leave to simmer for 5 minutes. Add the wine and continue simmering for about 10 minutes, stirring occasionally, until the mixture develops a syrupy consistency.
  2. Meanwhile, in a separate saucepan, boil the walnuts in a generous amount of water for 1 minute, then drain them. Mix the syrup and walnuts together and store in a sterilised jar until serving. Kept in the refrigerator, they can last for up to a month.
