I once served this to a Lebanese friend who said it was just like the eggplant salads she ate growing up. I had never thought of it, but its simple mix of eggplant, tomatoes and onion is also very Mediterranean. In the Philippines, fresh, tart ensaladang talong is paired with grilled fish or fried meat. I leave the stem attached for the classic Filipino treatment of eggplant; it’s also really aesthetic. If you prefer a smokier finish, blacken the eggplant over a stovetop flame instead of under the grill.
