Method

  1. Preheat the oven to 180°C. Put 1 kg chicken (whole or pieces) in a roasting dish. Rub with a splash of olive oil and sprinkle with chilli flakes, salt and freshly ground black pepper. Roast for 30–40 minutes, turning often. Meanwhile, prepare the glaze by whisking together 2 tablespoons honey, 1 tablespoon grated ginger and the zest and juice of 1 lime. Pour over the chicken and continue roasting until golden brown and cooked through. Scatter with coriander leaves and serve with lime wedges and steamed rice.
