2 slices bacon
1 quantity Stovetop popcorn
60g butter
115g brown sugar
3 tablespoons maple syrup
2 tablespoons bourbon
1 teaspoon natural vanilla extract
1/8 teaspoon bicarb soda
salt

Method

  1. Preheat oven to 120°C. Grease and line a baking tray with baking paper. In a frying pan, fry the bacon until crisp. Drain on kitchen paper, then crumble over the popcorn. Set aside. Combine the butter, sugar and maple syrup in a saucepan over medium heat. Cook, stirring constantly, until the sugar dissolves. Bring to the boil, then reduce the heat and simmer without stirring for about 5 minutes, until golden. Remove from the heat and mix in the bourbon, vanilla, bicarb soda and salt. Pour the caramel over the popcorn and stir to coat. Spread onto the tray and sprinkle with salt then bake, stirring every 15 minutes, for 1 hour. Allow to cool completely.
