Chocolate & salted caramel fondue

Ingredients

Quantity Ingredient
1 quantity Classic vanilla marshmallows
500g strawberries

Salted caramel

Quantity Ingredient
220g sugar
1 tablespoon glucose syrup
125ml thickened cream
50g butter, cubed
1/2 teaspoon fine sea salt flakes

Chocolate fondue

Quantity Ingredient
200g great-quality dark chocolate, chopped
125ml thickened cream
1 tablespoon cointreau liqueur, (optional)

Method

  1. Prepare the marshmallow as instructed, ensuring you allow plenty of time for it to set.
  2. To make the caramel, combine the sugar, glucose and 60 ml water in a medium saucepan over low heat. Cook, stirring, until the sugar dissolves, brushing the sides of the pan with a wet pastry brush to dissolve any crystals that may have formed. Increase the heat to high, bring to the boil and cook, without stirring, until the syrup is golden. Remove from the heat and carefully stir in the cream. Return to low heat and add the butter, 1 piece at a time, whisking until combined. Whisk in the salt. Pour into a small heatproof bowl and keep warm.
  3. To make the chocolate fondue, put the chocolate and cream in a small saucepan over low heat. Cook, stirring, for 4–5 minutes or until smooth. Remove from the heat and stir in the Cointreau, if using. Pour into a small bowl.
  4. Serve the salted caramel and fondue with marshmallows and fruit for dipping.

Notes

  • Choose your favourite marshmallows to dunk in these indulgent sauces. Try other fruit, such as pineapple, mandarin, banana or raspberries.
