A cook's Christmas: Darren Purchese

Darren Purchese, of sweets studio Burch & Purchese, shares how he'll be celebrating Christmas this year and the dishes that will feature on the day.

How will you be celebrating Christmas this year?

My parents are visiting from the UK and my sister who lives in the States is also coming over. We’ve not all been together as a family for Christmas in years, so it will be very special. We’ll all be spending time together and visiting my wife Cath’s family as well. So it will be a big celebration.

What typically features on your Christmas menu?

Oysters, chilli prawns, a selection of great cheeses from Maker & Monger and a ham from Gary McBean at Gary’s Quality Meats [both at Prahran Market in Melbourne]. Salads, roast potatoes and a rolled turkey for lunch. Dessert will be the pear tarte tatin from Lamingtons & Lemon Tart, but I’ll use mango and pineapple instead of pear.

Will you be trying any new dishes?

I’ll be perfecting my leftover turkey sandwiches on Boxing Day for an exciting new project with Cooked and Hardie Grant Books in 2017!

Any drinks you’ll reach for on the day?

A daggy Buck’s Fizz [orange juice mixed with sparkling wine or Champagne] is always my favourite start to a big day.
